  •  1/2 teaspoon of paprika
  •  1/4 teaspoon of oregano
  • 1/4 teaspoon of chili powder
  •  1/4 teaspoon of black pepper
  •  1/2 cup of diced red bell pepper
  • 1/2 cup of shredded cheese
  • 1/2 cup of frozen corn
  • 1/2 cup of chopped green chilies
  •  1/4 cup of chopped cilantro

  • To begin, preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

  • In a medium bowl, mix together the flour, salt, and olive oil until it forms a dough. Add the water a little bit at a time and knead until the dough is smooth. Let the dough sit for 10 minutes.

  • In a separate bowl, mix together the ground chicken, onion, garlic powder, cumin, paprika, oregano, chili powder, black pepper, red bell pepper, cheese, corn, green chilies, and cilantro until everything is evenly distributed.

  • Roll out the dough on a lightly floured surface to about 1/4 inch thick. Cut out 4-inch circles from the dough. Fill each circle with 2-3 tablespoons of the filling.

  • Fold the dough over the filling and press down the edges with a fork to seal. Place the empanadas on the prepared baking sheet.

  • Bake the empanadas for 25 minutes or until they are golden brown. Serve warm.

Chef’s Note:

If you’d like to add some heat to the empanadas, you can add a few teaspoons of your favorite hot sauce or diced jalapeños to the filling.
