Ingredients:
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 pound boneless, skinless chicken breasts, cut into small cubes
- 8 cups chicken broth
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 teaspoon salt
- ½ teaspoon freshly ground black pepper
- 8 ounces gluten-free wide egg noodles
- 2 cups frozen green peas
Instructions:
- Heat the olive oil in a large pot over medium heat.
- Add the garlic, onion, carrots, and celery and cook until the vegetables are soft, about 5 minutes.
- Add the chicken and cook until it is no longer pink about 5 minutes.
- Add the chicken broth, thyme, oregano, salt, and pepper. Bring to a boil, then reduce heat to low and simmer for 15 minutes.
- Add the egg noodles and cook for an additional 10 minutes, or until the noodles are tender.
- Add the frozen peas and cook for an additional 3 minutes, or until the peas are heated through.
