  • 2 tablespoons olive oil
  •  2 cloves garlic, minced
  •  1 onion, diced
  • 2 carrots, diced
  •  2 celery stalks, diced
  •  1 pound boneless, skinless chicken breasts, cut into small cubes
  •  8 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  •  ½ teaspoon freshly ground black pepper
  •  8 ounces gluten-free wide egg noodles
  •  2 cups frozen green peas


  • Heat the olive oil in a large pot over medium heat.
  • Add the garlic, onion, carrots, and celery and cook until the vegetables are soft, about 5 minutes.
  • Add the chicken and cook until it is no longer pink about 5 minutes.
  • Add the chicken broth, thyme, oregano, salt, and pepper. Bring to a boil, then reduce heat to low and simmer for 15 minutes.
  • Add the egg noodles and cook for an additional 10 minutes, or until the noodles are tender.
  • Add the frozen peas and cook for an additional 3 minutes, or until the peas are heated through.

If you don’t have gluten-free egg noodles, you can substitute regular egg noodles. Just be sure to check the label to make sure they are gluten-free.
