Ingredients:
- 1 kg boneless chicken
- 4 onions, finely sliced
- 4 tomatoes, finely chopped
- 2 tablespoons ginger-garlic paste
- 2 teaspoons chili powder
- 2 teaspoons garam masala
- 2 teaspoons coriander powder
- 2 teaspoons cumin powder
- 1 teaspoon turmeric powder
- 3 tablespoons vegetable oil
- 2 bay leaves
- 2 cinnamon sticks
- 4 cardamoms
- 2 tablespoons yogurt
- 1 teaspoon of sugar
- ½ cup fresh coriander leaves, chopped
- 2 tablespoons fresh mint leaves, chopped
- 2 cups Basmati rice, washed and soaked for 20 minutes
- Salt to taste
- 2 cups water
- 2 tablespoons ghee (clarified butter)
- 2 tablespoons fried onions
- 2 tablespoons chopped cashew nuts
- 2 tablespoons raisins
Instructions:
- Heat the vegetable oil in a deep pan and add the bay leaves, cinnamon sticks, and cardamoms.
- Add the sliced onions and sauté until they turn golden brown.
- Add the ginger-garlic paste and sauté for a few minutes.
- Add the chopped tomatoes, chili powder, garam masala coriander powder, cumin powder, turmeric powder, and salt, and sauté for 5 minutes.
- Add the chicken and sauté for 10 minutes.
- Add the yogurt, sugar, fresh coriander leaves, fresh mint leaves, Basmati rice, and 2 cups of water and boil.
- Reduce the heat to low and cook for 20 minutes until the rice is cooked and all the water has been absorbed.
- Heat the ghee in a small pan and add the fried onions, cashew nuts, and raisins.
- Fry for a few minutes and add the mixture to the biryani.
10. Serve hot with a dollop of ghee on top.
