Authentic Mughlai Chicken Biryani Recipe

Ingredients:

  •  1 kg boneless chicken
  • 4 onions, finely sliced
  • 4 tomatoes, finely chopped
  • 2 tablespoons ginger-garlic paste
  • 2 teaspoons chili powder
  •  2 teaspoons garam masala
  • 2 teaspoons coriander powder
  • 2 teaspoons cumin powder
  • 1 teaspoon turmeric powder
  •  3 tablespoons vegetable oil
  •  2 bay leaves
  •  2 cinnamon sticks
  • 4 cardamoms
  •  2 tablespoons yogurt
  •  1 teaspoon of sugar
  • ½ cup fresh coriander leaves, chopped
  •  2 tablespoons fresh mint leaves, chopped
  • 2 cups Basmati rice, washed and soaked for 20 minutes
  • Salt to taste
  • 2 cups water
  •  2 tablespoons ghee (clarified butter)
  •  2 tablespoons fried onions
  •  2 tablespoons chopped cashew nuts
  •  2 tablespoons raisins

Instructions:

  • Heat the vegetable oil in a deep pan and add the bay leaves, cinnamon sticks, and cardamoms.

 

  •  Add the sliced onions and sauté until they turn golden brown.

 

  • Add the ginger-garlic paste and sauté for a few minutes.

 

  • Add the chopped tomatoes, chili powder, garam masala coriander powder, cumin powder, turmeric powder, and salt, and sauté for 5 minutes.

 

  • Add the chicken and sauté for 10 minutes.
  • Add the yogurt, sugar, fresh coriander leaves, fresh mint leaves, Basmati rice, and 2 cups of water and boil.

 

  •  Reduce the heat to low and cook for 20 minutes until the rice is cooked and all the water has been absorbed.

 

  • Heat the ghee in a small pan and add the fried onions, cashew nuts, and raisins.

 

  • Fry for a few minutes and add the mixture to the biryani.
    10. Serve hot with a dollop of ghee on top.
